Smoked Salmon Quesadillas
1/4 cup cream cheese, softened
1/2 cup crumbled feta cheese
4 (8") flour tortillas
3 1/2 ounces smoked salmon (chopped)
1/2 cup green onions (finely chopped)
fresh cilantro (chopped)
Butter (to grease griddle)
1/2 cup sour cream
2 tbs chipotle peppers in adobo sauce (minced)
2 tbs lime juice
1. In a small bowl, mix the ingredients for the chipotle sauce and set aside.
2. In medium bowl, mix cream cheese, green onion, and feta cheese until blended; completely spread over two of the tortillas and place the other tortillas on top.
3. Place the quesadillas on a greased griddle or pan and cook over medium heat for 1 to 2 minutes on each side until light brown and cheese has melted. Serve with the chipotle sauce and top with cilantro if desired
