Method
Add the sweetened condensed milk, butter, cocoa powder, vanilla extract, and salt to a medium saucepan.
Cook over medium-low heat, stirring constantly, for 8 to 10 minutes, or until the mixture becomes thick and glossy and begins pulling away from the bottom and sides of the pan. You can also test the thickness by dragging a spoon through the center of the pan and seeing if the mixture stays separated for at least 5 seconds.
Transfer the mixture to a lightly buttered bowl or plate. Press plastic wrap directly against the surface and allow it to cool completely.
Refrigerate for 1 to 2 hours, or until firm enough to scoop and roll.
Lightly grease your hands with butter or neutral oil. Scoop about 1 tablespoon of the chocolate mixture and roll it into a smooth ball.
Roll each brigadeiro in colorful sprinkles or sanding sugar.
Gently press candy eyes and an edible candy mouth onto the front of each brigadeiro if desired.
Refrigerate briefly to firm, then allow the brigadeiros to come closer to room temperature before serving.
