These Halloween Brigadeiros are rich, fudgy chocolate truffles rolled in colorful Halloween sprinkles and finished with edible candy mouths. They’re easy to make, fun to decorate, and perfect for Halloween parties, dessert boards, or a spooky treat table.

Ingredients

  • 1 14 oz can sweetened condensed milk
  • 2 tablespoons unsalted butter
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla bean paste or extract
For Decorating
  • Butter or neutral oil for greasing hands
  • Colorful Sprinkles
  • Edible candy eyes/mouths

Method

  1. Add the sweetened condensed milk, butter, cocoa powder, vanilla extract, and salt to a medium saucepan.
  2. Cook over medium-low heat, stirring constantly, for 8 to 10 minutes, or until the mixture becomes thick and glossy and begins pulling away from the bottom and sides of the pan. You can also test the thickness by dragging a spoon through the center of the pan and seeing if the mixture stays separated for at least 5 seconds.
  3. Transfer the mixture to a lightly buttered bowl or plate. Press plastic wrap directly against the surface and allow it to cool completely.
  4. Refrigerate for 1 to 2 hours, or until firm enough to scoop and roll.
  5. Lightly grease your hands with butter or neutral oil. Scoop about 1 tablespoon of the chocolate mixture and roll it into a smooth ball.
  6. Roll each brigadeiro in colorful sprinkles or sanding sugar.
  7. Gently press candy eyes and an edible candy mouth onto the front of each brigadeiro if desired.
  8. Refrigerate briefly to firm, then allow the brigadeiros to come closer to room temperature before serving.

Notes

Styling Notes
Use a mix of colors so every brigadeiro looks a little different. Arrange them on a black, white, or metallic platter and alternate the colors for a playful Halloween display.
Get Creative
Roll the brigadeiros in crushed chocolate cookies, sparkling sanding sugar, nonpareils, finely chopped chocolate, or Halloween-themed sprinkles. Add candy eyes along with the mouths to turn them into little monsters.
Notes
Store the brigadeiros in an airtight container in the refrigerator for up to 5 days. For the best texture, let them sit at room temperature for 10 to 15 minutes before serving.
