Servings 4 coupe glasses

Ingredients

  • 21 oz Brie cheese, rind removed, room temperature
  • 2 tablespoons honey
  • 1 pinch flake salt
  • 3–4 tablespoons honey, for drizzling
  • ¼ cup pistachios, finely chopped or pistachio flakes

Method

  1. Remove the rind from the Brie and cut into small pieces. Let it fully come to room temperature so it blends smoothly.
  2. In a food processor, whip Brie until completely smooth, light, and fluffy. Scrape down the sides as needed. You may add one tablespoon of heavy cream for a lighter mixture.
  3. Fit a piping bag with a large Russian tulip tip and fill with the whipped Brie mixture.
  4. Divide evenly between 4 coupe glasses. Hold the piping bag straight down and pipe in one steady motion to create a tulip shape.
  5. Drizzle each with honey and sprinkle with chopped pistachios.
  6. Serve immediately with crackers, crostini, or fresh fruit.

Notes

Optional: add one tablespoon of heavy cream to the whipped Brie for a lighter mixture. Serve with crackers, crostini, or fresh fruit.

  • Why is honey listed twice in ingredients? Does the 2 tablespoons go into the food processor with the Brie?
