Ingredients

  • 60 oz French Brie rind removed, room temperature *I used 3 large 20” brie rounds
  • 1 cup shelled pistachios chopped
  • 4 tablespoons honey
  • Flake salt
  • Hot baguette for serving

Method

  1. Remove the rind from the Brie rounds and cut into small pieces. Let it fully come to room temperature so it blends smoothly.
  2. In a food processor, whip Brie until completely smooth, light, and fluffy. This will take 3-5 minutes. Scrape down the sides as needed. You may add two tablespoons of heavy cream or whole milk for a lighter mixture if your food processor is struggling.
  3. Fit a piping bag with a large Russian tulip tip and fill with the whipped Brie mixture.
  4. Spread a thin layer of brie on the bottom of the box and sprinkle with pistachios. Using the bottom of a glass, press down on the pistachios so they adhere to the bottom layer of brie. This will help the brie tulips stick immediately when piping. Hold the piping bag straight down and pipe in one steady motion to create a tulip shape.
  5. Drizzle with honey and sprinkle with flake salt or more chopped pistachios.
  6. Serve immediately with crackers, crostini, or fresh fruit.

  • Which Russian piping tip gives you these tulips? Can you please show it? I have them but don’t know which one to use. Thank you.
