Spider Web Pumpkin Pancakes

Ingredients

  • 1 ½ cups whole milk
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar
  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • Blackberries optional
  • ** Piping bag or Squeeze bottle

Method

  1. Stir milk, pumpkin, egg, oil, and vinegar together in a large bowl until well combined.
  2. Whisk flour, brown sugar, baking powder, baking soda, spices, and salt together in a separate bowl. Add to wet pumpkin mixture and whisk just until combined.
  3. Heat a nonstick pan over medium-high heat or spray a griddle with cooking spray.
  4. For the spider webs, fill a piping bag fitted with a round tip with the pumpkin batter. Pipe an 8 point asterisk on the griddle. Connect the ends of the asterisk by gently piping batter between each one with a loose curved line. ** Pour 3 to 4 tablespoons batter for each pancake onto the hot griddle and flatten batter slightly with a spoon if making regular pancakes.
  5. Cook until small bubbles appear and start to pop (about 2 minutes). Flip and cook for another minute on the other side. Stack and serve with butter, blackberries, and syrup.
