Healthy lettuce wraps with seasoned chicken, fresh vegetables, and homemade green goddess dressing.
Servings 2 wraps

Ingredients

  • 6 oz seasoned chicken breast
  • 1 avocado, thinly sliced
  • 4 large pieces iceberg lettuce or Bib lettuce 2 per wrap
  • 4 ounces fresh mozzarella, Parmesan flakes, or preferred cheese
  • ¼ English cucumber, thinly sliced
  • ¼ cup broccoli sprouts
  • ½ shallot, thinly sliced
  • Kosher salt
  • Ground black pepper
  • 2-3 tablespoons GG Dressing
  • 1 cup whole milk Greek yogurt
  • ½ lemon, juiced about 2 tablespoons juice
  • ¾ cup parsley
  • 1 cup mixed herbs, dill, tarragon and/or cilantro
  • 2 tablespoons chopped chives
  • 1 tablespoon quality olive oil
  • 1-2 garlic cloves
  • ¼ teaspoon Kosher salt
  • Freshly ground black pepper

Method

  1. Blend Greek yogurt, lemon juice, parsley, mixed herbs, chives, olive oil, garlic cloves, salt, and pepper together until smooth.
  2. Layer 2 pieces of lettuce per wrap as the base.
  3. Add seasoned chicken breast, avocado slices, cheese, cucumber slices, broccoli sprouts, and shallot slices to each wrap.
  4. Season with kosher salt and ground black pepper to taste.
  5. Add 2-3 tablespoons of green goddess dressing to each wrap, either drizzled on each bite or mixed with the chicken before wrapping.

Notes

You can skip the broccoli sprouts and avocado and substitute croutons and Caesar dressing to make a chicken Caesar salad wrap instead. The green goddess dressing can also be mixed directly with the chicken before wrapping.
