How to make a spicy Paloma

Serving: Serves 1

Ingredients for Cocktail

2 oz mezcal or tequila
2 oz grapefruit juice, freshly squeezed
1 oz lime juice
1 oz simple syrup, recipe below
Sparkling water, to top off the drink
Lime wedges, for wiping rim of glass

Simple Syrup
1 cup sugar
1 cup water

Chile Lime Salt for Rim
2 tbs sea salt
1/4 tsp zest of half a lime
1/8 tsp chipotle chili powder

Directions

  1. In a small saucepan over medium heat, combine the sugar and water and heat until sugar is dissolved to make the simple syrup. Pour into a measuring cup and set aside to cool.

  2. Next we will make the salt mixture for the rim. Combine salt, lime zest, and chili powder in a shallow bowl or small plate. I like to place a little more chili powder on one side of the plate so it is mostly salt around the rim and then salty chili powder on about an inch of the rim on one side. Use a lime wedge or a small amount of simple syrup to coat the rim of your glass. Press the rim into the mixture so the salt is around the edge and set aside.

  3. In a cocktail shaker filled with ice, combine the mezcal, grapefruit juice, lime juice, and cooled simple syrup and shake for 30 seconds.  

  4. Pour the drink into your salt-rimmed glass filled with ice. Top with a small amount of sparkling water.  Add time wedge and serve.
