Homemade Fortune Cookies with InnovAsian
Ingredients
3 large egg whites
3/4 cup sugar
1/2 cup butter, melted
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
3 tablespoons water
1 cup all-purpose flour (about 5 oz by weight)
Directions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat. In a bowl, whisk the egg whites and sugar until frothy but not stiff. Add the melted butter, vanilla extract, almond extract, and water, then mix until well combined. Sift in the flour and stir until the batter is smooth with no lumps.
Spoon about 1 tablespoon of batter onto the prepared baking sheet and spread it into a thin 4-inch circle. Bake 2 to 3 cookies at a time, as they set quickly once out of the oven. Bake for 7 to 9 minutes, or until the edges are golden brown.
Remove the cookies one at a time. While still hot, place a fortune in the center, fold the cookie in half like a taco, then gently bend the folded edge over the rim of a cup to shape it like a traditional fortune cookie. Let the cookie cool in a muffin tin or small cup to hold its shape. Repeat with the remaining batter.
Tips: Write your fortunes in advance on small strips of paper. If a cookie hardens before you can fold it, place it back in the oven for about 30 seconds to soften. Store the finished cookies in an airtight container.
