Eggless Cookie Dough Ice Cream Bites

Who ever invented cookie dough ice cream did it all wrong. We’re all over here scouring our ice cream trying to find these minuscule cookie dough chunks in the carton. What kind of sick game is this? I finally corrected the ratio. Eggless cookie dough ice cream bites on the blog today. 🖤


1/2 cup all-purpose flour
2-1/2 tablespoons brown sugar
3 tablespoons white sugar
2 tablespoons butter, softened
1/8 teaspoon vanilla extract
2 tablespoons water
1/2 cup semi-sweet chocolate chips
Vanilla Ice Cream

1. In a medium bowl, mix together the brown sugar, white sugar, and butter until completely smooth.

2. Stir in vanilla and water then mix in the flour until it's all well combined. Add chocolate chips and squeeze with your hands if it's too hard to mix with a spoon. Shape into a loaf and wrap in plastic wrap and freeze for 1 to 2 hours.

3. Using a melon scoop, scoop out a ball of cookie dough and gently press your finger into the center and place a small amount of vanilla ice cream in the center then cover with cookie dough and roll into a ball and freeze again for 10 minutes.
