Salted Caramel Banana Bread

Burrrr it's cold out here in LA! I won't complain, because I'm sure all of you outside of California want to punch me in the face, but burrrr it's cold today! I've got my heater on, my Christmas tree all lit up, and I'm still in my pajamas. Just made my second cup of coffee and I'm eating a warm slice of banana bread with salted caramel sauce. Whatttt!? I know. It's delicious and hearty and freaking amazin. Make it.

Salted Caramel Banana Bread

Banana Bread Ingredients
2 cups all-purpose flour
Flour
1 tbs baking powder
1/2 teaspoon kosher salt
1/2 cup unsalted butter, softened
1 cup packed light brown sugar
2 eggs
3 ripe bananas, mashed
1 tablespoon vanilla extract

Salted Caramel Glaze Ingredients
1/4 cup packed light brown sugar
2 tablespoons unsalted butter
2 tablespoons heavy whipping cream
1/3 cup confectioners' sugar
1/4 teaspoon kosher salt

Directions
1. Preheat oven to 350 degrees F (175 degrees C) and spray a 9x5 loaf pan with cooking spray.

2. Whisk flour, baking powder, and 1/2 teaspoon salt together in a small bowl and set aside.

3. Beat 1/2 cup butter and 1 cup brown sugar together in a bowl using an electric mixer until light and fluffy.

4. Add eggs, 1 at a time, beating just until combined. Add in bananas and 1 tablespoon vanilla extract into butter mixture.

5. Gradually add flour mixture, beating on low speed, just until incorporated. Do not overmix. Pour batter into prepared pan.

6. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 55 minutes. Cool in the pan for 20 minutes. Run knife around edges of bread and transfer to a wire rack.

7. To make the caramel sauce heat 1/4 cup brown sugar and 2 tablespoons of butter in a saucepan over medium heat and bring to a boil. Cook, stirring constantly with a whisk, until sugar is dissolved, about 1 minute.

8. Stir cream into brown sugar mixture and remove saucepan from heat.

9. Stir 1/3 cup confectioners' sugar and 1/4 teaspoon salt into cream mixture until glaze is smooth.

10. Drizzle glaze over loaf or slice and drizzle over each slice.
