Cinnamon Swirl Pancakes

Use whichever pancake recipe you like most for the actual pancake recipe. The following recipe is for the cinnamon mixture only.


3/4 stick butter (softened)
1 cup brown sugar
2 Tbsp cinnamon


1. In a large microwave safe measuring cup, combine the butter, brown sugar and cinnamon and pace in microwave on high for 15 seconds or until it is soft enough to be squeezed through a squeeze bottle or pastry bag (you can also use a ziplock bag and cut the corner off if you don't have a pastry bag). Pour mixture from your measuring cup into a pastry bag fitted with a medium tip. (We used a clear plastic squeeze bottle).

2. Pour pancake batter onto hot griddle and pipe cinnamon mixture onto batter in a swirl shape. When pancakes are lightly browned, flip and cook until done. You can do some on the other side if you like but it wont cook into the batter and it doesn't look very nice so we recommend only piping the cinnamon mixture onto the first side. Serve with Syrup.
