The Best No-Churn Ice Cream

Ingredients

For every ice cream base
  • 2 cup cold heavy whipping cream
  • 1 can (14 oz) sweetened condensed milk
  • 1 pinch salt (optional but brings out the flavor)
  • 1 drizzle Flavorings and Toppings of choice (See BELOW for ALL variations)
Other condensed milk options
  • 14 oz Sweetened  Condensed Oat Milk
  • 14 oz Sweetened Condensed Coconut Milk

Method

  1. In a medium bowl whip the cold whipping cream until stiff peaks form. Don’t over-mix or it turns grainy.
  2. In a medium bowl, mix sweetened condensed milk and pinch of salt. Gently mix in flavorings (Ie: cocoa powder, strawberry jam, pistachio paste, mango puree etc.) Mix well. Do not add hard toppings yet.
  3. Gently fold fluffy whipped cream into the condensed milk mixture. Keep it light and airy. Fold until everything is incorporated. Fold in mix ins now (Ie: pretzel pieces, chocolate chips, marshmallows etc.)
  4. Transfer to a loaf pan or ice cream box and cover and freeze 6 hours or overnight.
  5. When planning to serve leave out at room temperature for 30 minutes until soft and scoopable.

Notes

Variations

**Always taste your ice cream mixture after you mix in the add-ins and adjust to your liking, before freezing.

Vanilla

Add 2 tablespoons vanilla bean paste to the condensed milk.

Rocky Road

Whisk 1/3 cup cocoa powder into the condensed milk, add 1 cup mini marshmallows and ¼ cup chopped almonds.

Mint Chip

Add 1 tsp peppermint extract, 1 tsp vanilla extract or paste, 6-10oz of chocolate chips (depending on preference) and 3 to 5 drops green food coloring (optional, adjust to your tone)

Chocolate

Add 1 tablespoon vanilla and 1/3 cup Dutch cocoa powder into the condensed milk.

Lemon Ice Cream

Add 1/3 cup fresh lemon juice, 3 teaspoons lemon zest, packed, 1 1/2 teaspoons vanilla bean paste, and 1/8 teaspoon salt into the condensed milk.
* 1/2 teaspoon lemon extract, if you desire a more tart lemon ice cream

Oreo

Add 1 tablespoon vanilla extract or paste to the condensed milk. Fold in 1–1.5 cups crushed Oreos.

Nutella swirl

Add 1 tablespoon vanilla extract or paste to the condensed milk. Swirl in 1/2 cup Nutella at the end.

Brownie chunk

Add 1 tablespoon vanilla extract or paste to the condensed milk.Add chopped brownies right before freezing.

Strawberry swirl

Cook down 2 cups sliced strawberries with 1/4 cup granulated sugar into a thick jam (about 35 minutes on low-medium until thick and jammy stirring in between so it doesn’t stick to your pan) Cool completely. Add 1/8 cup crushed dried strawberries for color. Fold and swirl in. You can also top with freeze dried strawberries or add graham cracker pieces for a strawberry graham cracker variation.

Peaches & Cream

Add 1 tablespoon vanilla extract or paste to the condensed milk.Fold in diced ripe peaches plus 1 tbsp lemon juice.

Mango

Add 1 tablespoon vanilla extract or paste to the condensed milk.Blend mango into a puree and fold in.

Raspberry white chocolate

Add 1 tablespoon vanilla extract or paste to the condensed milk. Fold in 1 cup fresh raspberries + 4 ounces white chocolate chunks.

Cookie dough

Add 1 tablespoon vanilla extract or paste to the condensed milk. Fold in edible cookie dough pieces.

Cheesecake

Add 1 tablespoon vanilla extract or paste to the condensed milk. Mix in 4 oz softened cream cheese and fold in 1 cup broken graham cracker pieces.

Birthday cake

Add sprinkles + 1 cup of cubed poundcake.

Pistachio

Add 1 tablespoon vanilla extract or paste to the condensed milk. Add pistachio paste or finely chopped pistachios.

Espresso

Add 1 tablespoon vanilla extract or paste to the condensed milk. Dissolve 1 tbsp instant espresso in 1 tbsp warm water, mix into base. Add ½ cup dark chocolate chunks.

Salted caramel

Add 1 tablespoon vanilla extract or paste to the condensed milk. Swirl in 1 cup of caramel + 1 teaspoon flaky salt.

Lavender honey

Add 1 tablespoon vanilla extract or paste to the condensed milk set aside. Infuse whipping cream with culinary lavender in a saucepan over low-medium heat until steaming but not boiling.
Remove from heat, add lavender, cover, and steep for 15 to 20 minutes. Strain and cool in fridge then whip and proceed. Add 1/4 cup honey or more as desired. You could also add honey comb pieces or white chocolate chunks.

  • In Direction 2. it says to mix SCM, vanilla and salt. However, there is no mention of vanilla in the list of ingredients. How much vanilla should be added? Thank you!

    Where do you get edible cookie dough for the cookies and cream recipe

      They sell edible cookie dough in tiny containers near the yogurt at some stores in America, but it’s hard to find. All Recipes has a good recipe for “edible cookie dough” – you simply roll into balls and put them in the ice cream.

  • Is there a healthy substitute for the sweetened condensed milk? Would unsweetened coconut cream work?

    • There is an organic sweetened condensed milk – do t know how much sugar, and there is a coconut condensed milk.

    Do you have a recipe for coconut icecream? I hat it at a resort in Mexico a fee years ago and it was delicious

      I would guess coconut extract and then shaved or shredded coconut if desired (I prefer just the coconut flavor with the smooth texture).

    • I would sub the condensed milk with coconut condensed milk so you don’t have to add as much coconut extract. Sometimes the alcohol in that can kill the other flavors if too much is needed to reach the coconut intensity you’re looking for. Then add extract a little bit at a time until you’re satisfied. That’s how I make my homemade pineapple coconut pops!

  • How about a less sugar option?

  • This may seem like a silly question, but what’s the capacity of the cups you’re measuring ingredients in? I live in Poland. Here, if recipes don’t specify proportions in grams and milliliters, they usually specify proportions for 250 ml glasses.

    my husband LOVES this ice cream! I have made the strawberry twice and making the chocolate version next. Super easy to make. The only issue is my husband has a hard time waiting 6 hours before eating! And I got the ice cream containers because they just make it look cute!

  • OK, my Boys and I each made a flavor when did s’mores when did strawberry cheesecake and I did Rocky Road? They’re in the freezer and we’re really excited.

    • To make chocolate peanut butter you could add 1 tbsp of PB2 to the chocolate recipe!

    I just made the chocolate version and swirled in some creamy butter! It’s delicious. Thinking next time I might just add some chopped peanut butter cups or use some peanut butter chips! I have also made the vanilla using the coconut sweetened condensed milk, it was a huge hit with my kids and grandkids! Adding that pinch of salt is definitely worth it! Best ice cream ever!

  • How do you keep your ice cream from thawing out so quickly? I see in the instructions it says to take out 30 minutes before serving but when I take mine out, it melts very quickly (within a few minutes). Is there a trick to this?
    Otherwise it’s delicious!!

      The first time I tried this recipe I also had areas of my batch that weren’t firm. The second time I made it I took half a can of condensed milk and added the (liquid and powder) flavorings first and mixed it together well. Then I added my 2 cups heavy cream to the condensed milk mixture and beat it all together (instead of combining the cream with the condensed milk AFTER I whipped the cream by itself! …and then add your topping to the fully whipped mixture.) It was very well incorporated but expect to whip the mixture longer by at least 5 mins. When I froze it on my second batch, the whole mixture was well incorporated and hard. *I don’t think this recipe requires a whole can of condensed milk; half was sweet enough for my household 🙂

    I’ve tried other recipes but this was my best. Could I use jarred peaches as opposed to fresh for my peach ice cream?

  • I’ve tried the cookies and cream, mint chocolate chip, chocolate and I also made a vanilla with toffee crunch and all of them have been so delicious. My family loves every one of them.
