These peanut butter eggs are to die for. I don’t know what to say other than I just ate three with my coffee in about two minutes flat. These are freaking amazing. I’m feeling a little sick because I haven’t had breakfast yet, but truly they are a special little quick dessert. If you are making these for Easter you can add sprinkles or stripe them with white chocolate. All options are equally delicious. Recipe is below!

  • ½ cup butter softened
  • 1 package confectioners' sugar 16oz

  • 1.5 cups semi or milk chocolate chips
  • 1 tablespoon vegetable shortening

Method

  1. In a large bowl, cream the butter.
  2. Gradually add the confectioners' sugar and peanut butter.
  3. With your hands shape the mixture into 16 eggs and place on waxed paper-lined baking sheets. Refrigerate for 1 hour.
  4. In a microwave safe bowl, melt semi or milk chocolate chips and shortening; stir until smooth. Dip eggs in chocolate and allow excess to drip off. Decorate with sprinkles or leave as is. Return eggs to waxed paper. Chill until set.

Notes

For Easter, you can add sprinkles or stripe the eggs with white chocolate. These are no-bake candies that require refrigeration time.
