Cauliflower Crust Pizza

Doesn’t this look like pizza? Like thick, crunchy, deliciously gooey cheese pizza? You are totally drooling right now. I know this isn’t even real pizza and I’m totally drooling writing this. This pizza is freaking amazing. Freaking fabulous. And no, there is NO bread …… The thick, salty crust is made with a vegetable …. cauliflower! Yes, cauliflower!

Seriously, I need to learn how to write. I feel like every blog I post has the words freaking and serious in it. Those big fancy pants food bloggers are going to think I’m unprofessional.

A thick, crunchy pizza crust made with cauliflower instead of bread, topped with cheese and marinara sauce.

Ingredients

  • 1 head cauliflower
  • 1.5 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 large egg, lightly beaten
  • 1 cup mozzarella cheese, freshly grated
  • 0.25 tsp pepper
  • 0.5 tsp kosher salt
  • 0.5 teaspoon dried Italian herb seasoning
  • Marinara Sauce & desired toppings

Method

  1. Preheat your oven to 350 degrees and line a 12" springform pan with parchment paper. Spray the parchment paper with non-stick spray as well as the sides of the springform pan because the cauliflower sticks.
  2. Steam your cauliflower and drain. Chop and smash into fine pieces. Set aside in large bowl to cool. Press down with paper towel to remove excess water or use a cheesecloth.
  3. While the cauliflower cooks, heat 1/2 tbs of olive oil in a small skillet over low heat; add the garlic and cook for 1 minute, stirring constantly. Remove from heat and pour over cauliflower.
  4. Add egg, 1/2 of the mozzarella cheese, dried Italian herb seasoning, salt and pepper and the rest of the olive oil. Stir to combine and press down in your prepared springform pan.
  5. Bake until the crust is light golden, approximately 40 minutes. Remove from oven, let cool slightly and remove from pan. Peel off parchment paper and place crust on a non-stick baking sheet. Bake for an additional 10 minutes at 400 degrees.
  6. Turn your oven up to 500 or broil. Top your crust with marinara sauce and the rest of the mozzarella cheese. Sprinkle with a tiny pinch of kosher salt and pepper. Broil a couple minutes until the cheese is melted and golden in spots. Slice and serve!

Notes

Make sure to press down the cauliflower with a paper towel or cheesecloth to remove excess water for a better crust. The cauliflower tends to stick to the pan, so proper preparation with non-stick spray is important.
