Creamy Coconut Lime Cocktail

I am super into coconut lately. I’m not sure when or why or how, but when I turned 40 my tastebuds changed and I started to really like coconut. It’s quite refreshing. This recipe has been tested and tested again and it’s really quite delicious. Please do yourself a favor and add the popsicle. It’s a delicious addition!

Creamy Coconut Lime Cocktail

Ingredients

Juice from 1 lime

1 teaspoon granulated sugar (optional)

1 ounce (2 tablespoons) white rum

1/2 ounce (1 tablespoon) coconut rum

1/4 cup canned full fat coconut milk well stirred

Coconut popsicles

Ginger Beer

Shredded Coconut

Directions

1. Gently chop your shredded coconut into smaller pieces. Set aside on a shallow plate.

2. Fill a second shallow plate with agave. Place the rim of your glasses in agave and firmly dip in coconut.

3. In a cocktail shaker add the lime juice and sugar (if using). Add white rum and coconut rum. Fill with ice and shake until well combined. Add the coconut milk and shake again.

4. Strain into your prepared glass. Add coconut popsicle and slowly top with a small amount of ginger beer. Garnish with lime (I used a dried orange slice). Enjoy immediately.

TIP: If you don’t like sweet drinks omit the teaspoon of sugar.
