Earth Day Matcha Blueberry Scones

Earth Day Scones 🌎 These are so unbelievably sweet and delicious. Don’t let the Matcha scare you! The tart blueberries and sweet white chocolate, combined with the subtle earthy matcha flavor pair so well together. These scones are sweet enough that they do not need a glaze, but if you were to add a glaze I would lessen the sugar and use a blueberry glaze. Recipe below!

Ingredients

2 cups (250g) all-purpose flour

1/4 cup granulated sugar

2 and 1/2 teaspoons baking powder

2 tablespoons Matcha powder

1/2 teaspoon salt

1/2 cup (8 Tbsp) unsalted butter, frozen

1/2 cup heavy cream (plus 1 tbs, brushing)

1 large egg

1 and 1/2 teaspoons pure vanilla extract or paste

1 cup fresh (or frozen) blueberries

1/4 cup chopped white chocolate

Optional Topping

Coarse sugar

Directions

  1. Place your butter in the freezer while you gather the ingredients. Whisk flour, sugar, baking powder, Matcha, and salt together in a large bowl.

  2. Grate the frozen butter using a box grater and add it to the flour mixture. Use a pastry cutter (or hands) to combine the mixture until it comes together and it forms pea-sized crumbs.

  3. In another bowl whisk together 1/2 cup heavy cream, one egg, and vanilla extract. Pour into the flour mixture and add the blueberries and white chocolate. Mix together until moistened.

  4. Work dough into a ball. Dough will be sticky. If it’s too sticky, add a little more flour. Use an ice cream scoop to make 6-8 balls. (You can also slice into a traditional scone shape)

  5. Brush scones with remaining heavy cream and sprinkle with coarse sugar if desired.

  6. Place scones on a parchment lined baking sheet and refrigerate for 20 minutes until chilled.

  7. Preheat oven to 400°F (204°C) and bake for 22-25 minutes or until golden brown around the edges. Remove from oven and let cool. Enjoy!
