No Bake Date Cookies

Our Favorite No Bake Cookies 🍪 Only 3 Ingredients. Leave plain or top with dark chocolate, flake salt or chopped nuts. The dates are sweet so the flake salt really makes these extra delicious 🤤 Trust me.

Ingredients

1 1/4 cups of packed pitted dates (about 10-12 oz)

1 cup peanut butter

2 tsps vanilla extract

Toppings:

Flake salt or Sea salt

6oz Dark chocolate

1/4 cup chopped salted peanuts

Directions

1. Line a baking sheet with parchment paper.

2. In a food processor, combine the dates, peanut butter, and vanilla. Pulse until well combined and crumbly. About 3-5 minutes.

3. Using a small melon baller, scoop out the dough to make about 24 balls. Place on the prepared baking sheet. Gently press down each cookie with a fork to flatten and make an imprint on each one.

5. Drizzle with dark chocolate and top with chopped nuts and flake salt. The salt is really good. The dates are sweet and the flake salt cuts the sweetness. I promise. Refrigerate for 1 hour Store in an airtight container in fridge.

Tips: I used a small melon baller for the cookies in the video. This makes 24 small cookies.
