Christmas Wedge

This salad makes me so happy 🥹 It’s whimsical and delicious. The tiny Sunset sprinkles tomatoes make it so elegant. I found my mini Sprinkles tomatoes at Trader Joe’s. As always, get creative and have fun.

Ingredients

1 box organic girl romaine leaves (or one head romaine)

Blue cheese crumbles

Fresh bacon crumbles (approximately 5 slices)

1 (3.5oz) container Sunset sprinkles tomatoes

Quality blue cheese dressing

Freshly ground pepper

2 White carrots + star cookie cutter (stars)

2 Red carrots, cut horizontally (tree trunk)

4oz White cheddar, cubed (presents)

1 Beet cut into strips (stripes on presents)

Directions:

  1. Cook your bacon as desired and set aside to cool. Once cool, chop into bite size pieces.

  2. Lay your romaine leaves on your platter, fanning the large “frilly” end of each lettuce leaf outward towards the edge of the platter. Use the smaller lettuce leaves at the top of the tree and the larger leaves ar the base of the tree.

  3. Sprinkle your tomatoes (you can also halve some of them if you have larger tomatoes), fresh bacon crumbles, and blue cheese.

  4. Slice your white carrot into 1/2” round discs and using a small star cookie cutter or a pairing knife make star shapes. Place on salad tree.

  5. Slice your red carrot in half lengthwise and create your tree trunk. If you wish to add presents simply cube white cheddar cheese or any cheese. I used thin slices of beet to create the “ribbon”.

  6. Add ground pepper as desired all over the salad and serve with blue cheese dressing on the side.
