Crinkle Cake

Crinkle Cake 👀 Layers of phyllo dough, butter, sugar, and custard. It is what it is 😮‍💨

You can get creative with this recipe and add different flavors. Tuck raspberries into the folds for a berry crinkle cake, chopped pistachios, or even mini chocolate chips. I’ve also dusted with cinnamon before. All are delicious.

Crinkle Cake

Ingredients

1 package phyllo dough (2 rolls)

1 cup butter, melted

Custard

1 cup whole milk

2 large eggs

1 cup sugar

1/4 tsp salt

1 tablespoon vanilla extract

Simple Syrup

1/2 cup sugar

1/2 cup water

1/2 teaspoon lemon juice

Instructions

  1. Thaw phyllo dough.

  2. Preheat your oven to 350 degrees and line a 9”×13” dish with parchment paper or butter your dish.

  3. Working with two stacked sheets of phyllo dough at a time, gather the sheets into a loose accordion at one end of the dish. Continue stacking the phyllo sheets until you have used both rolls and your dish is full.

  4. Bake phyllo sheets for 10 minutes.

  5. Remove from oven and drizzle the melted butter evenly over the phyllo dough. Return to oven and bake for another 10 minutes.

  6. In a large measuring cup prepare the custard by whisking together milk, eggs, sugar, salt, and extract.

  7. Remove phyllo from oven and pour the custard evenly over the top. Return to oven, and bake until the top is golden and crispy, about 30-40 minutes.

  8. Prepare the simple syrup in a small saucepan over medium heat. Combine sugar, water, and lemon juice. Whisk to combine and cook until the syrup has thickened about 12-15 minutes (like a maple syrup consistency) TIP: If your simple syrup is too thin it will make the cake soggy.

  9. Remove the crinkle cake is golden and drizzle the syrup evenly over the top. Let it cool for 15 minutes and serve.
