S'mores Rice Krispies Treats

I read this quote this morning and I did some quality thinking while blow torching mini marshmallows. Is this true? When I'm super happy, what do I do? Do I call someone I love and tell them? Hell yeah I do. I share it. I got an email this morning and I was super excited so I called my Aunt Kelly and told her right away. Now sure I was happy when I was sitting all alone reading the email, but I wanted to share it which made me even happier. There is nothing better than sharing happiness. In whatever capacity. Now combine sharing happiness with someone you love and that's the recipe for an amazing relationship. These S'mores Rice Krispies Bars are a pile of happiness so share them.

S'mores Rice Krispies Treats

Ingredients (Bars)
3 tbsp butter
4 cups mini marshmallows (about 40)
5 cups Rice Krispies cereal
1 cup mini graham cracker squares (buy or cut from full size crackers)
½ cup mini chocolate chips

Ingredients (Top Layer)
12 oz semi sweet chocolate chips (1 bag)
10-12 full size graham crackers, broken in half
3-4 cups mini marshmallows

Directions
1. Line a 9" X 13" baking pan with parchment paper. Lightly butter or spray with cooking spray and set aside.

2. Place the butter and 4 cups of mini marshmallows in a large microwave safe bowl. Microwave for 1½ minutes. Stir and repeat if needed until the butter and marshmallows are melted and well combined. TIP: You can also do this on the stovetop. 

3. Add the cereals and graham cracker squares and stir to coat.

4. Add the mini chocolate chips. Stir and immediately pour mixture onto the prepared pan. Press mixture to edges and flatten. (tip - cover the Rice Krispie mixture with a piece of lightly buttered wax paper and another baking pan to make flattening easier).

5. For the top layer - melt the semi sweet chips in a microwave safe bowl in 30 second intervals stirring in between until just melted. Spread the chocolate evenly on top on the Rice Krispies treats.

6. Lay the graham crackers on top of the warm chocolate leaving a tiny space between each cracker. Trim crackers if needed to fit the pan.

7. Place the pan in the fridge until the chocolate sets - approximately 10-15 minutes. Line a baking pan with parchment paper and set aside.

8. With a sharp knife, cut the treats into squares using the lines between the graham crackers as a guide.

9. Top each square with mini marshmallows and place on the prepared pan. Broil until the marshmallows are toasted - about 1-2 minutes. Watch carefully, they can burn!
