Chocolate Peanut Butter Brownie Cake

Ingredients

3⁄4 cup cocoa powder

3⁄4 cup shortening

2 1⁄4 cups sugar

4 large eggs

1 teaspoon vanilla

1 1⁄4 cups flour

1 teaspoon baking powder

1 teaspoon salt

1/2 cup milk chocolate chips

(12) 3.5" Peanut butter cookies or other cookies

Directions

1. Preheat oven to 350 degrees and grease (4) 4" mini cheesecake pans.

2. Melt shortening in a large saucepan over low heat, then stir in cocoa. Remove from heat.

3. Mix in sugar and vanilla then mix in eggs one at a time.

4. Stir in remaining ingredients then fold in chocolate chips.

5. Pour a small amount of batter into the prepared mini cheesecake pans then place one cookie inside each pan. Top with another helping of brownie batter, then add another cookie. Cover with more brownie batter, and add the third cookie and finally cover everything with brownie batter, leaving 1/4" of space to the top of the pan.

6. Bake for 30 minutes until cooked through. Cool completely, before removing from the cheesecake pan. Top with ice cream and melted chocolate and serve.
