EASY Peanut Butter Chocolate Ganache Cake

I have this new obsession with peanut butter. I feel like I never liked peanut butter cookies or peanut butter cake when I was younger, but now that I'm no longer in my 20's and I'm an old lady I feel like peanut butter is yummmmmmy. This cake is very simple and if you like peanut butter you will have no complaints!

EASY Peanut Butter Chocolate Ganache Cake


Ingredients for Cake
1/2 cup creamy peanut butter
1/2 cup butter, softened
4 eggs
2/3 cup water
1 (18.25 ounce) package yellow cake mix

Ingredients for Ganache
3/4 cup semisweet chocolate chips
3 tablespoons butter
1 tablespoon light corn syrup

Directions
1. Preheat oven to 325 degrees F (165 degrees C) and grease and flour two 9 inch round cake pans or two oblong pans like I used up above.

2. In a medium sized bowl combine 1/2 cup peanut butter and 1/2 cup butter. Cream until light and fluffy. Add eggs one at time and mix well.

3. Add cake mix and water and stir until combined. Pour batter into prepared pans.

4. Bake at 325 degrees F (165 degrees C) for 22 minutes or until toothpick comes out clean. Cool completely before frosting.  

Directions for Ganache
1. In a double boiler over hot water, combine chocolate chips, butter, and corn syrup.

2. Stir until chips are melted and mixture is smooth. Spread warm glaze over top of cake, letting it drizzle down the sides or let cool and spread evenly on top. Refrigerate if you wish to let it harden a bit.
